Palermitan Caciotta
Caciotta Palermitana made with raw whole milk from grazing Cinisara cows: aromatic, fat and very high in protein.
Before stretching, the dough is manipulated for a long time, ensuring that the cheese flakes in the mouth.
Cheese with a smooth and shiny rind , straw yellow in colour, tending towards amber.
White paste that turns straw yellow with a soft and compact consistency, a sweet, slightly acidic flavour .

Caciotta Palermitana is a fresh cheese, produced with whole bovine milk.
Caciotta Palermitana has a straw yellow colour, the compact texture is very soft, the external rind is edible.
Derived from whole, raw cow's milk; natural microflora; lamb or kid rennet; natural and cultivated pasture with integration of fodder and concentrates in the stable in variable quantities compared to the fodder season.
Caciotta Palermitana produced with traditional techniques involves the coagulation of milk in a wooden vat at 35°C with lamb rennet paste. The curd is drained with the help of a particular wooden container, "cisca", it is then cooked under the boil for about 4 hours, then it is placed on a "cannara" reed rack to be able to press it; the resulting paste is hung on a wooden stick "appizzatuma" to facilitate the purging of the whey. The next day it is cut, placed in the "piddiaturi", a spinning container, and spun with the help of a "vaciliatuma" wooden stick.
The Caciotta Palermitana is modeled by hand to acquire an ovoid shape and is then left to dry on a wooden board. The next day it is salted; salting takes place in saturated brine for approximately 2-4 hours. Left to dry after 48 hours it is ready to consume. It has a more or less thick ovoid shape with an ivory-colored paste. The flavor is acidic and fresh.
