Caurus : Our unfiltered red wine. The strong and pleasant body envelops every sip. The vines drink from the beneficial influence of the maritime wind, giving the wine a unique and fascinating character. Perfect to pair with second courses of meat or with dark chocolate as an end to a meal.

Eno-sensory analysis:

• COLOR : Intense ruby ​​red. To the eye it appears impenetrable given its structure and its light veiling.
• BOUQUET: Rich and very concentrated of red fruits, especially blackberries, cherries and plums. Very clean and delicate nose that makes you want to drink it with your nose
• TASTE : Of great taste balance, concentrated but at the same time elegant and balanced which makes it a very versatile and captivating wine given its delicacy and silkiness on the palate. In unfiltered wine, the residue of fermentation yeasts remains in suspension or on the bottom, which is why the aromas are constantly evolving, creating a constantly evolving tasting experience over time, also made complex by the maturation of the tannins.

Oenological data:

• ALCOHOL CONTENT: 14% Vol.
• RED VINIFICATION: Harvest of grapes at optimal ripeness. Destemming, maceration of the skins with the must. Soft pressing of the grapes and very slow fermentation at a controlled temperature with the yeasts naturally present in the grapes themselves.
• AGING: In steel barrels for 9 months and 3 months in oak barrels.
• AGING IN BOTTLE: 5/6 Months
• LONGEVITY OF THE WINE: Over 5 Years

How to taste it:

1. Tilt the bottle downwards.
2. Swirl the bottom to help suspend the yeasts.
3. Uncork and taste.
