Recipe with Grouper with Capers in Olive Oil:

Peel the garlic and fry it with a few tablespoons of extra virgin olive oil in a large non-stick pan. Add the peeled tomatoes and cook for 5 minutes. Season with salt and add the pitted olives. Continue cooking for approximately 8-10 minutes. until the sauce starts to narrow. At this point, add the Grouper fillets with Capers in Olive Oil , season them with a little salt and continue cooking for a few minutes, the time needed to cook the fish. The fillets should be cooked but soft. Add freshly ground white pepper and aromatic herbs (parsley and chopped thyme) and dried oregano. Serve the stewed grouper hot, accompanying it with plenty of toasted bread and raw extra virgin olive oil.
