Polizzi White Badda Bean
The Polizzi White Badda Bean is grown in the Polizzi Generosa valley and takes its name from its characteristic ball shape (badda in dialect).
Two ecotypes can be distinguished, similar in shape and organoleptic characteristics but different in colour: the white badda bean, ivory with pink/orange spots ; the black badda bean, ivory with dark purple/black spots.
Badda is a savory bean with hints of chestnut and almond at the end, when cooked it becomes creamy and does not fall apart.

Polizzi White Badda Bean SlowFood Presidium
For two centuries in the gardens of Polizzi Generosa, in the Madonie Natural Park, a two-coloured bean has been cultivated: medium-small and rounded, called badda, meaning ball in dialect: the Polizzi White Badda Bean.
The Polizzi White Badda Bean is a speckled bean, almost unknown outside the Madonie, with a unique colour: it is in fact two-coloured and, from time to time, can be ivory with pink and orange spots, or ivory with dark purple, almost black spots.
These are undoubtedly two local ecotypes that have acclimatized very well, over time, in this area.
Politicians also call it fasolo badda bianca or badda niura or munachedda, depending on whether the pinkish-orange or dark color is prevalent.
Badda beans are grown in small family gardens and local farmers have reproduced the seed independently for centuries.
In the highest areas of Polizzi, largely within the Madonie Natural Park, which here is called muntagna, sowing begins in the first week of June: traditionally the beans are sown on the day of Saint Anthony of Padua.
At the marina, however, i.e. at lower altitudes, sowing is done later, beyond mid-July, when the summer heat begins to fade.
The plants climb around four canes arranged in the shape of a small hut: u'pagliaru.
The harvest of the green pods begins after about 60 days, depending on the quotas it can take up to November.
The harvesting of beans for drying, however, takes place from October and November, before the pods open and let the seed fall.
It is a savory bean, with herbaceous and even salty notes, slightly astringent, with hints of chestnut and almond in the finish.
With cooking it acquires the right creaminess, without falling apart.

For thirty-five years now, in the new role of selectors, packers and distributors of dried legumes, it has represented a reality in the Sicilian distribution panorama, proudly carried forward by a new generation of women, with the support and experience of family members.
