The organic chickpeas used for the production of this Organic Chickpea Flour are sown between February and March, in rotation with cereals, vegetables and fodder.

Control of foreign weeds is carried out with summer plowing and false sowing. The harvest takes place when fully ripe, between July and August, depending on the years and altitudes.

The traditional stone milling keeps the temperature low during processing, preserves the organoleptic characteristics of the raw material and gives this flour the right degree of roughness.
