The extract is used to make excellent sauces for first courses, meat or fish with a very intense and particular flavour.

Tomato paste , the extract , is a fundamental ingredient of many of the traditional recipes of Sicilian cuisine .

It is added directly to the preparation of dishes during cooking or it can be diluted with water.

The extract tells a fascinating Sicilian story.

It is said, in fact, that at the end of each estate, the women gathered in a group to prepare a strattu, symbol of their femininity and of the lunar cycles.

Decades ago it often happened, passing through the streets of Sicilian villages, to see wooden boards strewn with drying tomatoes.

The tomatoes were placed on the walls near the houses or on the terraces of the houses, placed on the maidde, typical wooden tables, or in the fanguotti, the locally crafted ceramic plates.

A context in which today it is difficult to imagine coming across: even if it is not impossible.
