The extract it is used to make excellent sauces for first courses, meat or fish with a very intense and particular flavour. 

Tomato paste, the extract, is a fundamental ingredient of many of the  traditional recipes of Sicilian cuisine. 

It can be added directly to the preparation of dishes during cooking or it can be diluted with water. 

The extract tells a fascinating Sicilian story.

It is said, in fact, that at the end of each estate, the women gathered in groups to prepare u strattu, a symbol of their femininity and the lunar cycles.

Decades ago, walking through the streets of Sicilian villages, it was common to see wooden tables strewn with drying tomatoes.

The tomatoes were arranged on the low walls near the houses or on the terraces of the houses, placed on the maidde, typical wooden tables, or in the fanguotti, the ceramic plates of local craftsmanship.

A context that is difficult to imagine encountering today: even if it is not impossible.
