Maria Costanza White Dop Organic WineThe white wine “Maria Costanza” is a famous label from the Milazzo winery, obtained from the vinification of Inzolia and Chardonnay grapes in steel and, for a small part, in barrique. It is soft, enveloping, fresh and fruity, with hints of tropical fruit, yellow flowers, chamomile and aromatic herbs.

The Maria Costanza White Dop Organic Wine It is created by the Milazzo winery starting from a blend that features a great native grape variety, Inzolia, and an international grape variety that reaches interesting qualitative peaks in Sicily, Chardonnay. The vines of both varieties are grown using the Guyot system, and are rooted in a subsoil composed mainly of limestone-rich marl. The grapes, once harvested by hand, are softly pressed and fermented alcoholicly both in steel and, for a small portion of the total wine mass equivalent to 10%, in barriques. This division between steel and wood It then continues during the maturation phase, which lasts for 6 months.

Their cellars They are largely underground and designed with the lowest possible environmental impact. Built with materials designed to reduce energy consumption and achieve low emissions in air conditioning and with the aid of technologies to obtain maximum hygiene and ideal product care. For pressing, pneumatic presses with a central lung are used with very low operating pressures to operate with great delicacy on the grapes;
The maturation of their wines In steel it takes place entirely "sur lie", suspending the faeces in order to facilitate the release of the aromatic components of the yeast into the wine.
Their barrel cellar It extends entirely into the underground part of our cellars and contains over 500 barriques intended for the refinement of both white and red wines, as well as some bases for classic method sparkling wines. Here the barrels are filled and checked. The passage in barrique plays a primary role in ensuring the best evolution of our wines.
The choice of their woods it is fundamental. Our barriques are all produced in the best cooperages, strictly using oak wood. We use new barriques in common with a renewal cycle every five years.
Their cut. The most delicate moment. After the harvest, pressing, fermentation and the various maturation and refinement processes, each wine in our collection undergoes this delicate phase, which seals the passionate work of the winemaker and his collaborators, before entering the bottle where it continues to evolve until the moment it is poured into the glass.
It is at this stage that the long process of creating wine comes to completion, a journey of patience and technique that sometimes takes many years. This is the moment when the best characteristics of the grapes and the Milazzo imprint on winemaking find their synthesis.

- Maturation: During the refinement of approximately 6 months the wine is constantly subjected to “bâtonnage” to promote the lysis of the yeasts. Aged in bottle for approximately 2 months
- Alcohol: 13% vol
- Description: Maria Costanza Bianco represents a milestone in Sicilian viticulture. Our company was in fact the first to blend Inzolia and Chardonnay to create this elegant white wine.
- Work in the cellar: Pressing at controlled temperature. The free-run must, further refrigerated, undergoes clarification for 12-24 hours after which alcoholic fermentation begins. Part of the musts ferment in steel at low temperatures and part ferments in French oak barriques, specially selected for the maturation of white wines. The wines do not undergo malolactic fermentation and are kept on their lees until the following spring using “batônage”. The wine matures for at least 2 months in the bottle before being released for sale.
- Tasting notes: It has a beautiful straw yellow color with green reflections. On the nose it is seductive. At the opening, hints of white flowers blend well with aromatic vegetables, then enveloping notes of citrus flowers and leaves emerge. In the mouth it is full and with a beautiful structure, the sapidity guarantees a great persistence of flavour.
