Sicilian Chestnut Honey
Sicilian Chestnut Honey ranges from amber to almost black at sight, depending on the production areas. Crystallization is generally absent or occurs in large crystals.
Sicilian Chestnut Honey is strong and penetrating, tannic. Pungent flavor at first, then bitter and rich in mineral salts.
Sicilian Chestnut Honey is produced in the Messina area, in the mid-mountain areas in the month of June/July.
Characteristics:

Sicilian Bee:
- The Sicilian bee has greater genetic variance than any other subspecies of European honey bee, this is due to its African origins. By genetic variance we mean a greater number of genes that guarantee greater reactivity with respect to any possible problem.
- Early development of the brood even 8 or 9 frames between December and January, this allows you to have young bees, therefore greater duration and dynamism compared to ligustica and other Nordic bees, which have the winter brood block.
- Bee requested by greenhouse growers for the pollination of protected crops (watermelons, cantaloupes, strawberries etc..) being in its active and functional rusticity in the extreme situations of the tunnels, in which 0° degrees at night can follow 40° degrees during the day .
- It has been proven that in each hive only a small part of the bees go out to forage and of these only around 20% collect pollen and therefore only these are able to pollinate the flower. Since pollen is necessary for the sustenance of the brood and the Sicilian bee has abundant brood all year round, many more bees are used to collect pollen, which means that with the same number of foragers, the Sicilian bees are able to pollinate larger surfaces of crops.
- The Sicilian bee consumes very little honey, which allows for the same honey supply to have a greater probability of survival of the drawer.
- Strong ability to self-defense, in twenty-five years of working with the Sicilian bee and with the Sicilian f1 it has never happened to me that a hive or a nucleus with a queen allowed itself to be plundered.
