(Amygdalus communis L.)

Produced in the Caltanissetta and Agrigento areas in the month of February.

Color: slightly honeyed amber color tending towards beige when it crystallizes.
Crystallization: fine-grained crystals, it takes on the appearance of a cream when it crystallizes. Honey of very difficult production since this too is a winter honey, the bees brave the wind, the rain and clearly the cold to collect this nectar.
Smell: delicate but with an intense aroma reminiscent of the same fruit.
Flavour: initially delicate but as soon as it begins to melt in the mouth one is pleasantly surprised by the strong bitterness it releases, yes, a bitter honey.
Uses: honey for connoisseurs, certainly to be savored slowly on a slice of bread.
