Black cheese from Etna

Black cheese from Etna , typically Sicilian cheese, made from whole cow's milk.

Approximately 15 days after production, the forms of Black Cheese from Etna are immersed in the fresh marc of freshly drawn black Etna grapes , where they remain for 40 to 60 days.

Etna Black Cheese is produced in the months of September and October, when the grape musts are fermenting in the cellar.

The Affinity between Cheese and Wine

Cheeses and wines have a lot in common : a true elective affinity that refers to a suggestive reflection on how must is in some way comparable to milk.

Both products start from a natural element (grapes and milk) which subsequently undergoes a transformation , alcoholic fermentation for one and curdling for the other; both mature, age and die, each in a different way depending on the type.

And again, there are different types of milk just as there are different vines, there are cheeses to eat freshly curdled and wines to drink young.

And then there are also those who wanted to concretely realize this union which gave life to the Black Cheese of Etna, a cheese obtained from whole cow's milk which is immersed in the pomace of local black grapes.

The must of these pomace is not absorbed by the cheese but imbues it with its aroma, which subsequent maturing makes even more pronounced!

Curiosities about the "Drunk" of Cheese!

In reality, history teaches us that the treatment of cheese intoxication is an ancient, peasant practice , it seems to have been discovered accidentally during the Great War , when the peasants, to hide the cheeses from the raids of the soldiers, put them in pomace, considered material of waste and therefore not subjected to particular attention and investigations!

Another version traces the treatment back to an invention of a shepherd who, unable to provide oiling for the rind, decided to replace it with the cheaper grape must.

The fact is that the link with wine in this dairy product is inevitably very strong!
