The sweet green olives Nocellara del Belice Dop They are harvested while still green, full-bodied and fragrant at the beginning of October, from the sunny and enchanting olive groves of the Sicilian hinterland.
Using the Castelvetrano method, within 12 hours of harvesting, after selection and cleaning, the olives are soaked in caustic soda for about two weeks.
This process gently removes the bitterness without damaging the fruit pulp. Finally, the olives are rinsed with plenty of fresh water and preserved in brine for about three months before being consumed.
