Busiata is a pasta made from Sicilian durum wheat semolina, milled with natural stone.

Drawn in slow-drying bronze, this pasta is a typical specialty of the Trapani area. Its name is taken from the busi, or irons for working wool, which in the past were used to package it.

It is a very particular pasta, whose specialty lies in that twisted shape which allows it to retain the seasonings well. This makes it one of a kind and very tasty on the palate.

Traditionally it is combined with Trapani-style pesto , but it remains a particularly versatile pasta in combinations, therefore absolutely worth trying also with pistachio pesto, wild fennel pesto and spicy capuliato.
