Ingredients: Nocellara 78% green olives, extra virgin olive oil, parsley, mint, oregano, garlic, wine vinegar, salt.

Format: 190 g

The Sicilian Green Olive Patè is obtained from the processing of "Nocellara" olives, it has the delicate aroma and flavor of freshly pressed green olives.

The Nocellara olive has a rounded shape and an intense green colour, the soft and dense pulp gives it a fruity and very delicate flavour.

Food Properties of Nocellara Olives:

This Sicilian table olive is particularly rich in highly digestible dietary fibre, which significantly contributes to regularizing the functioning of the digestive system and preventing the onset of colon cancer.

This also helps to counteract cellular aging, because it contains an overabundance of polyphenols: substances with high antioxidant properties.

The Nocellara del Belice olive guarantees a good supply of minerals, in percentages even higher than those of many vegetables. In particular, the quantity of calcium and magnesium in table olives is comparable to that of breast milk!!

Production area and historical notes of Nocellara:

The production of these table olives is located in the Belice Valley and includes the olive-growing territories of the municipalities of Castelvetrano, Campobello di Mazara and Partanna in the province of Trapani.

Olive growing in the Belice Valley has a very long tradition, especially for table olives: in fact this crop has managed to establish itself almost spontaneously both due to the suitable environmental characteristics and the valuable product requirements of the only cultivar represented in such a preponderant way.

Inherited from the Greeks, since 1600 olive growing has been, if not the sole and exclusive economic resource for the Belice Valley, undoubtedly the most important in the cultural order of the area.

Over the last two centuries, the dual purpose of the Nocellara del Belice cultivar has been discovered and consequently olive production has diversified into oil and table olives.

Recommendations for use: 

Sicilian Green Olive Patè can be used as an appetizer, spread on slices of toasted bread for delicately flavored aperitifs, but why not also use it to embellish your first courses?
The best usage advice? Use your imagination!
The pulp of the Nocellara del Belice olives is firm and crunchy, and the taste is slightly bitter.
Being a large-sized olive, the layer of pulp is thick and consistent, which makes it an exceptional table olive, excellent for all uses: it is often consumed plain as an aperitif, or as an accompaniment to cured meats, cheeses and vegetables, but also as an ingredient to flavor dishes.

Do you know the difference between Green Olives and Black Olives?

The substantial difference in color is due to a different level of maturation.
More precisely: green olives are harvested at the beginning of their maturation, or even before; black olives, on the other hand, remain on the tree for longer.
When an olive reaches maturity it has a very dark color, tending towards purple.
