A little more flattened and pot-bellied than its cousin, the not very distant Nebrodi provola, the Madonie Smoked Provola is produced within one of the richest areas of biodiversity in Italy: the Madonie.
The Madonie are a mountainous land close to the sea, in Sicily: from its heights the view extends as far as Etna, the Nebrodi chain and the Aeolian islands.

- Treatment : The processed product is left to dry for a couple of weeks, it is then placed in vats and covered with dry virgin Marsala for a further 4/6 days.

Production Mode
The milk to make Madonie Smoked Provola , raw and whole, is heated to 37-38°C in the traditional wooden vat, to which sheep rennet paste is added.
Once the desired density has been reached, the curd is broken into grains the size of a hazelnut and left to rest for a variable time, pouring hot water or whey.
The mass is then left to dry on a wooden table and cut into thin slices which are placed in the vat and moistened with water at 85°C.
At this point the dough is stretched, handling it with the hands and with the help of a stick.
When it reaches good elasticity, small pears are formed (the classic provola is rounded, with a very short "neck") which, tied two by two and hung astride a pole, mature for at least 10, 15 days in cool and dry environments. ventilated. The classic smoking process is then implemented.
