The latter speaks of it as a product that could not be missing from the table of King Theodoric, for whom he worked for a long period as secretary.

Caciocavallo Ragusano Dop it is a typical product of the province of Ragusa and is made with the milk of the Modican cow. This cow with a reddish coat, also rustic and easily adaptable, offers its precious milk only when there is a calf at its mother's side, a milk with a truly incredible flavor that gives the cheese unique aromas. The Modican cow has always been present in Sicily, but is at risk of extinction. Luckily, a special Slow Food Presidium has been established to support its breeding.

Many people when they think of Caciocavallo Ragusano Dop imagine a rather small, pear-shaped cheese. However, this is not Sicilian caciocavallo. In fact, the one produced in Sicily has a very particular shape, a parallelepiped. It is also very large. In fact, a wheel of caciocavallo can weigh up to 10 kg!

After creating a perfect sphere with the cheese paste, it is placed on a wooden board. We then proceed to shape it into the shape of a palarallelepid with the help of some very heavy pieces of wood.
