• Soil : medium texture, mixed limestone and chalky, hilly, whose altitude varies between 230 and 260 meters above sea level.

• Harvest : manual in small boxes. After destemming and crushing, the grapes are brought to a temperature of 8-10ºC and left to macerate. After soft pressing, the must is separated and decanted by cold sedimentation. At the end of fermentation, there follows a period of refinement on the fine lees for three months at a controlled temperature in steel and approximately two months of refinement in the bottle before marketing.
