The Cellar

Ayunta, producer of the Sicilian Etna Bianco Doc Piante Sparse wine is a small winery located almost 700 meters above sea level, on the northern slopes of Mount Etna in Sicily, near the small village of Randazzo, north of the city of Catania.

Their goal is to produce wines with the best personalities of the terroir and native vines from Etna.

The wines express elegance, balance and freshness, to highlight the pure taste of the terroir and all the differences of each vintage in each single vineyard.

Approximately 3 total hectares of vineyards arranged on different points of the slopes of Etna where local varieties are grown such as Nerello Mascalese and Nerello Cappuccio as regards the red berry, while Carricante and Catarratto are the white ones (like those of our Sicilian Etna wine Bianco Doc Piante Sparse )

The terroir is obviously volcanic with the presence of rocks and ash but varies from one plot to another based on the geological history of the volcano's eruptions.

We do not own entire white grape vineyards, but in our old red grape vineyards, the ancestor planted a few white grape vines here and there. Mainly Carricante, but also Catarratto.

No one can really say whether this was done to have fresh, juicy grapes for the table, or to have white grapes to bring juice and freshness to the red wine.

In any case, we have always considered this white vine as a treasure : with careful work we have mapped them, understanding how to lead them to a dedicated and separate harvest designed to produce a high-class white wine: just like the Sicilian Etna Bianco Doc Piante wine Scattered !

Intense straw yellow in colour , the nose is an explosion of fruity, floral and mineral notes reminiscent of stone.

In the mouth it is a dry and warm wine, with a strong personality. Minerality reigns supreme, enhancing its territory.

Acidity, freshness and a prominent mineral body are the main characteristics of the personality of the Sicilian Etna Bianco Doc Piante Sparse wine .
