The Terre Siciliane Zibibbo IGT "Oxydia" from the Florio cellars comes from a selection of the best Zibibbo grapes ripened on the island in the warm African wind.
Intense and aromatic, it has a complex and strong aroma and its combination with spicy cheeses, once tried, is difficult to forget.
Terre Siciliane Zibibbo IGT "Oxydia" is made with 100%, carefully selected Zibibbo grapes.
Immediately after the manual harvest which takes place at the end of September, the grapes already in the overripe phase are left to dry further; we then move on to soft pressing and controlled fermentation in such a way as to reach an alcohol content of 5-6°C.
Wine distillate is added to block the fermentation process and above all to preserve part of the sugars.
Maturation continues until the spring season and refinement takes place in the bottle for a period of at least two months.
