Sicilian Tuma Persa

Tuma Persa Siciliana : the process taken from a text from the 1930s.

Our Tuma Persa Siciliana is a double fermentation cheese for a pressed paste with a unique and sweet flavour.

Tuma Persa Siciliana, " Lost" because it was abandoned for about 20 days before being recovered and processed in the same way as Sicilian Pecorino!

Sicilian Lost Tuma

Sicilian Tuma Persa is a typical and rare cheese produced only on the island of Sicily.

The origin of the Sicilian Tuma Persa is very ancient: its processing is taken up by a text from the 1930s.

The Sicilian Tuma Persa has a very mellow taste , its peculiarity lies in the herbaceous aftertaste!

How do you get lost tuma?

Sicilian Tuma Persa is obtained by milking whole cow's milk with the addition of kid rennet paste .

The T uma Persa Siciliana cheese is then placed in the molds and left to ferment for about ten days.

It is thanks to the mold that surrounds the cheese that the Sicilian T uma Persa acquires its characteristic and inimitable flavour!

But the process isn't over:


After the first phase of maturing , the T uma Persa Siciliana is cleaned with water and left to mature for another ten days.

Only after these two steps is the Sicilian Tuma Persa covered to be salted.

The result is a soft cheese with a yellow ocher rind , which takes on a darker color when subjected to "curatina", i.e. capping made with olive oil and ground pepper.

Curiosity: Why the name Persa?

Tuma Persa Siciliana owes its name to its processing phase , which includes, as previously read, two phases of maturing, as well as abandonment.

The term " lost" in the name is to be attributed precisely to this phase of "abandonment" of the cheese!
