Drunk Marsala cheese
From a dairy housed in an old tuff quarry recovered as a garden, Ubriaco al Marsala is a sheep's cheese, processed and left to dry for a couple of weeks, then placed in vats and covered with dry virgin Marsala for a further 4/6 days.
The flavor of our Marsala Ubriaco Cheese is aromatic, pleasant and inviting, rich in fruity notes.
A tip: Ubriaco al Marsala is excellent if sprinkled with Sulla honey !

Our Marsala Ubriaco Cheese has an aromatic, pleasant and inviting flavour, rich in fruity notes.
The Ubriaco al Marsala comes from a dairy housed in an old tuff quarry recovered as a garden, it is a sheep's cheese, processed and left to dry for a couple of weeks, it is then placed in vats and covered with dry virgin Marsala for a further 4/4 hours. 6 days.
Why is it called Drunken Cheese?
Ubriaco cheeses such as Ubriaco al Marsala are truly particular refined cheeses.
The technique of making a cheese involves immersing the wheels in vats of fresh pomace that has just been drawn off but not squeezed, which is therefore still soft. This process can be repeated especially for aged cheeses.
Our cheese is then "intoxicated" by our Sicilian wine par excellence: Marsala. An explosion of incredible and 100% Sicilian taste and aroma!

Our cheeses such as Ubriaco al Marsala are processed exclusively with the milk of the 800 purely Belice breed animals from our own agri-livestock company, obtaining a closed circuit that boasts absolute quality controls.
The flock is left in a semi-wild state within the almost 60 hectares of the property which allows for healthy fodder for the animals;
Furthermore, the farm is completely free from Brucellosis, a great plague for dairy producers.
