Vastedda is one of the few examples of stretched curd sheep's cheese. In the past it was produced in the summer in an attempt to recover pecorino cheeses that had defects.

Vastedda della Valle del Belice DOP is a Sicilian organic stretched curd cheese made with sheep's milk with a fresh, sweet and pleasant flavour.

Vastedda della Valle del Belice DOP is the only Sicilian stretched-curd sheep's cheese, unmistakable for its focaccia shape and its particular taste, typical of fresh sheep's milk cheeses. Its careful processing makes it light and digestible, reducing the fat mass present and maintaining the levels of proteins, vitamins and mineral salts unchanged. This Sicilian cheese is still produced today respecting the artisan tradition, according to the production regulations of the "Vastedda della Valle del Belìce" protection consortium.

The legend:

The most credible legend about the birth of Vastedda tells of an elderly cheesemaker from the Belìce Valley (Sicily) who made this cheese by pure chance; after milking his sheep and processing the milk for Pecorino, he put the pasta in the typical rush baskets to make it harden, but as luck would have it, due to the sirocco and the particularly hot day, the pasta soured. The cheesemaker then tried to eliminate the acidity by immersing the cheese in hot water. By doing so, the cheese began to string and when the cheesemaker placed it on a plate he created the first form of Vastedda della Valle del Belice DOP.

Pairings:

Vastedda della Valle del Belice DOP is enhanced with olive oil, oregano, fresh tomato or orange jam. It can be accompanied by both white and red wines, by virtue of its fresh and delicate flavour. The best combination is obtained with typical Sicilian wines such as Nero d'Avola, Merlot, and Syrah.
