Our unfiltered white wine Zephyrus : Produced from vineyards refreshed by the sea winds, this wine embraces the naturalness and authenticity of the territory. The light base present, typical of an unfiltered wine, adds intriguing and constantly evolving aromas, creating a unique and satisfying tasting experience. Eno-sensory analysis:

• COLOR : Straw yellow with greenish reflections. The lack of clarity, typical of an unfiltered wine, is very evident. This gives it a remarkable visual depth that makes you want to immediately examine it with your nose.
• FRAGRANCE: Intense, rich and concentrated. The notes of ripe yellow fruits such as apricot, grapefruit and citrus fruits in general stand out with hints of citrus flowers. But the predominant olfactory prerogative is the great sensation of quince which persists for a long time on the nose.
• TASTE: Very consistent in the mouth with a strong sensation of chewiness, fresh, savory and good drinkability. Its long persistence entices you to drink the second glass. Zephyrus has great pairing versatility as despite its fragrance and freshness it has a good structure capable of withstanding even the most difficult pairings.

In unfiltered wine, the residue of fermentation yeasts remains in suspension or on the bottom, which is why the aromas are constantly evolving, creating a constantly evolving tasting experience over time.

• TYPE OF VITICULTURE: Counter espalier
• VARIETIES USED: Catarratto and Viogner
• VINEYARD LOCATION AREA : Western Sicily.
• ALTITUDE: 450/500 meters above sea level
• SOIL TYPE: Calcareous, of medium texture with the presence of skeleton which allows optimal aeration of the soil.
• ORIENTATION AND EXPOSURE OF THE VINES : The vineyard is located at the top of a hill so the vines receive the sun optimally from rising to setting. For the same reason the vineyard is lapped by winds from all directions. All this gives the grapes and wines unique organoleptic characteristics.
• FARMING SYSTEM: Guyot
• STRAINS/HA : 4500
• GRAPE YIELD QUANTITY/HA: 70ql/ha
• HARVEST PERIOD: Third decade of August, First decade of September

Oenological data:

• ALCOHOL CONTENT: 13% Vol
• WHITE VINIFICATION: Harvesting of grapes at optimal ripeness. Destemming, cold maceration of the skins with the must (4° C). Soft pressing of the grapes and very slow fermentation at low temperature with the yeasts naturally present in the grapes themselves.
• AGING IN steel barrels : 9 months 
• AGING IN BOTTLE: 3 months
• LONGEVITY OF WINE: Over 3 Years
• SERVICE TEMPERATURE: 8-10 °C

1. Tilt the bottle downwards.
2. Swirl the bottom to help suspend the yeasts.
