Almond Paste: A Unique Recipe

Sicilian almond paste : do you know something more delicious and typical? Ideal for desserts, cakes, pastries, biscuits, donuts and granitas , this delicacy is inextricably linked to the city of Catania but has also become very popular in other locations. His secret? Only the best organic almonds from Sicily , which retain all the sun and beauty of an island and a territory rich in ancient traditions. Born in the Middle Ages in the monastery founded by the Martorana nobles, where it was called "royal paste" for its goodness worthy of a king, almond paste has an original recipe that has been handed down over the millennia until today. Today we offer you an easy and light recipe for authentic Sicilian almond paste. Get ready!

Ingredients for 4 people)

  • 250 g of peeled almonds
  • 250 g of sugar
  • 2 egg whites
  • almond flavour

To garnish:

    • candied cherries

    • almond grain

  • whole almonds

Preparation

  1. Take a mixer and pour in peeled Sicilian almonds and sugar and blend everything until the ingredients are reduced to powder. The egg whites and the almond flavoring must then be combined in the mixer, mixing everything together
  2. The dough obtained must be compact, soft and suitable to be placed in a piping bag . Line a baking tray with baking paper, in which the pastries created with the dough will be placed. We decorate each of them with candied cherries or whole almonds
  3. Place the almond pastries in the fridge for at least 7 hours covered with cling film and then cook them in a preheated fan oven at 180° for about 15 minutes. Remember: they must maintain a pale complexion. Once baked, let them cool
