Today we offer you a light recipe with wholemeal spaghetti that blends the best of Sicilian cuisine and culture with an original and spicy combination. Often combined with vegetables (tomatoes, courgettes, aubergines), tuna or lemon, wholemeal spaghetti is ideal for even slightly experimental light recipes , perfect for your summer!
I created this recipe for an informal dinner with friends on a very hot summer evening when I only had squid and ginger available. This gave me a fantastic idea for preparing and seasoning wholemeal spaghetti in a fresh and original dish. Two flavors that pair well in an overall light recipe to which I added a further note of freshness that I found in the mint from my garden.
How to prepare organic wholemeal spaghetti with squid in ginger and mint cream
I made this quick recipe with wholemeal spaghetti but you can use the size and type of pasta you like best. Ideal for long pasta, such as spaghetti alla guitar , the sauce goes equally well with some types of short pasta, such as the organic Arica caserecce or the organic calamarata from Pastificio Minardo .
I suggest you, since the main ingredient is squid, use the calamarata pasta format: it adapts very well to this dish with a very pleasant result both to the palate and to the eye.
Regardless of the format, wholemeal pasta contains the same calories and more or less the same nutritional values as non-wholemeal pasta, but with a lower glycemic index. Pay particular attention to cooking the wholemeal spaghetti: the recipe is at its best if it is al dente.
Ingredients
We have considered doses for 4 people. You will need:
- 350 g of pasta
- extra virgin olive oil
- a clove of garlic
- 30 g of ginger
- 300 g of cleaned squid
- Salt and Pepper To Taste
- mint
Method
- Let's start with the pasta: boil it for 8 minutes in boiling water. Cook it al dente !
- Sauté a clove of poached garlic in extra virgin olive oil, add the grated ginger, then the squid cut partly into julienne strips and partly into rings, salt and pepper to taste.
- As soon as the squid is cooked add the chopped mint. If you want to give a certain creaminess to the sauce, blend a third of it and add it to the remaining part again.
- Add the sauce to the pasta and sauté it in the pan with the sauce.
