Palermitan pancake

Frittella ( Frittedda ) is a typical Palermo dish made with spring products. It is a side dish rich in nutritional elements and, unlike appearances , it is not fried ! In fact, it is a simple and appetizing dish based on artichokes, peas and broad beans. The Frittella is a traditional dish of Palermo cuisine , although it is present throughout Sicily in different variations.

Ingredients for 4 people)

  • 2 kg of broad beans to peel
  • 1 kg of fresh peas to peel
  • 5 artichokes
  • 2 shallots
  • EVO oil to taste
  • Salt and Pepper To Taste.

How to prepare the Palermo pancake

  1. Clean the onion and chop it, clean the broad beans and peas, clean the artichokes by removing the external leaves, cutting the top and also cleaning the base. Cleaning the artichokes is completed by cutting them into quarters and then into further segments and removing the beard
  2. Add the broad beans to the sautéed onion, then the peas and finally the artichokes, cook, stirring occasionally
  3. Cook for about 30 minutes. Salt and pepper to taste

A variant simply consists of flavoring the pancake with chopped fresh mint. Another variant is to make the sweet and sour pancake by adding, at the end of cooking, a glass of white wine vinegar and a spoonful of sugar and cooking for a few more minutes until the vinegar has completely evaporated.
