After delighting you with the original recipe for spatula fish fillets in pepper cream , today we offer you another summer variant of a delicious but light dish that can satisfy both adults and children. In fact, we will use the fillets for tasty light Sicilian chops . Very simple and very quick to prepare! The doses indicated are enough for 4 people, the preparation time is 30 minutes and the cooking time is just 10 minutes . Let's begin!
Ingredients for 4 people)
- 16 pieces of paddlefish, already filleted, approximately 10 centimeters each
- 100 grams of grated stale bread
- 40 grams of grated Sicilian caciocavallo
- 1 pepper
- salt and pepper
- extra virgin olive oil
- a clove of minced garlic
- chopped parsley
- capers
Preparation
- First wash, dry and clean the paddlefish. Remove any remaining bones with tweezers and lay the fish on a cutting board with the skin side facing up.
- Now let's think about the filling: put the stale breadcrumbs, cheese, finely chopped garlic and parsley and coarsely chopped capers in a bowl. Pour as much oil as needed to obtain a soft and garnet dough. Salt and pepper. You can add more cheese instead of salt.
- Peel the pepper after quickly toasting it, dice it and blend it in the blender with parsley and oil. It will accompany the spatula fish chops as a dip, moistening and flavoring the mixture.
- Place the stuffing on the fillet, then roll the fish on itself, making sure that the stuffing does not come out of the sides. Thread the roll onto a wooden skewer: place a maximum of 4-5 on each skewer.
- Now pass the rolls in the remaining filling, soaked in oil, breading them. The oil will cook the fish better and create a golden crust.
- How to cook them? But absolutely grilled, as tradition dictates! Alternatively you can grill them or on the stove, cooking the chops over low heat for 7-8 minutes per side until golden brown. The spatula cooks in a very short time and always remains soft. If you want, you can also cook them in a preheated oven at 200 degrees in a pan lightly greased with oil and turning them halfway through cooking. Serve with the pepper cream. Enjoy your meal!
