Stirred broccoli

Autumn is the best time to enjoy broccoli , a magnificent product of the earth. In particular, the month of October lends itself well to creating completely innovative and equally delicious recipes. In this regard, stirred broccoli is a typical Sicilian recipe , which can be used as a side dish and as a condiment for a good first course. In fact, the famous pasta cu i vrocculi arriminati is one of the major Sicilian specialties, prepared both in the oven and in the pan.

And here is the recipe for four people.

Ingredients



  • 1 broccoli of about 1 kg

  • 1 onion

  • 80 g of raisins

  • 80 g of pine nuts

  • 100 g of tomato sauce

  • Salt to taste

  • Evo oil to taste

  • Pepper as needed



Method



  1. In a pan, stew the onion with the extra virgin olive oil.

  2. Add the broccoli peeled and cut into small pieces, leaving it to brown.

  3. Add the tomato sauce, the pine nuts and the raisins soaked in the water.

  4. Add salt and pepper and cook over low heat, turning occasionally until the broccoli is cooked.


You can serve as a side dish, or you can opt to cook the pasta well al dente and stir it in a pan with the sauce.

Also, you could use the sauce to make baked pasta . In fact, after having cooked the pasta for a few minutes less than the expected cooking time, you can add the sauce with plenty of pecorino or caciocavallo cheese , both grated and diced. Place everything in a preheated oven at 180 degrees for 30 minutes and your baked pasta with stirred broccoli will be ready to be enjoyed.
